Two holes will serve you better than one. Overtime you find it faster to move the bench dog than to wind the screw. You could instead just create a stepped shoulder to capture the sliding dog block. I really like your simple design. Also, I would thread the dog block and use a garter where the handle enters the top so that when the vise is retracted the handle doesn't stick out.
