You'll want to orient the grain so it's running downhill on the sole and also consider any defects in the wood. Keep them toward the top of the plane, in the handhold, and try to place them so they can be trimmed off. The snipes bills have persimmon "boxing," which is what Clark and Williams use. He offers it as an option for his rabbet planes as well.
